BLACK BEAN BURGERS

Great Alternative to the hamburger

Ingredients:

1 can black beans

1 large egg

1/2 cup Parmesan cheese (shredded)

1/4 cup bread crumbs (i like Italian seasoned best)

1 tsp dill

Pinch salt

⅛ tsp ground black pepper

Directions:

Drain and rinse the black beans then place them into a medium bowl. With a wooden spoon, smash ¾ of the beans so the are mostly a paste.

Create a well in the middle and add the egg, cheese, breadcrumbs, dill, salt and pepper. Mix well. The mixture should be a thick paste at this point, if it seems runny add either more cheese or breadcrumbs to thicken.

In a skillet on the oven (or a cast iron) heat it and add either olive oil or butter.

Form the mixture into patties (size of your choice about ½” thick) and after the pan is hot, place them in making sure there is room for you to flip them.

Cook on each side until browned, roughly 6-7 min. You can check the brownness by slightly lifting up an edge. You will know they are done when the cheese is looking really melty :)
