PUMPKIN PIE OVER-NIGHT OATS

This recipe is a healthy breakfast or snack for all of you pumpkin lovers! It is great to put it in mason jars for your weekly meal prep, as it will keep for at least 4 days in a sealed container in the refrigerator.

The best part? IT tastes just like a slice of mom’s homemade pumpkin pie!

The Good Stuff:

  • ½ cup almond milk

  • ½ cup pumpkin purée (NOT pumpkin pie mix)

  • ¼ cup old-fashioned oats

  • 1 tbsp honey or agave (I recommend using the full amount the first time and adjusting for sweetness after!)

  • ¼- ½ tsp ground cinnamon

  • â…› tsp nutmeg

  • â…› tsp clove

  • ½ tsp Vanilla

To make:

  1. Place the oats in your container, then add the milk, vanilla, spices and honey/agave. Place the pumpkin on top.

  2. In the morning, mix everything together really well and enjoy!
