Summer Fresh Blackberry Smoothie

You all know I am always looking for new ways to spice up my morning superfood shakes, and when I stumbled upon this recipe I knew that I had to share it with you!


This smoothie tastes like a spoonful of blackberry cobbler with the health benefits of a produce rich meal! Now that's my kind of fast food!


You are going to keep coming back to this one time and again for that tart, juicy blackberry mixed with creamy coconut milk, sweet dates and bright lemon.


A little bit about why this combo is so amazing:



The Superpowers of Blackberries:

Blackberries are and excellent source of vitamin C, with half your daily serving contained in just one cup! We all want to look youthful, and making sure you get enough vitamin C is crucial since it is needed for the production of collagen in the body. Vitamin C not only helps to improve elasticity in the skin and prevent premature aging, but it helps keep the lining of our gut healthy, improves bone health and shortens the length of viruses that attack our bodies. It is also a great antioxidant, helping to fight free radicals and oxidative stress.


Did you know these tart little berries are super high in fiber? Well they are! They are also high in water content, so they help to re-hydrate you after a good nights rest and kick start your metabolism in the morning. Fiber, which most people struggle to get their daily dose of, is crucial for combating bloating, removing toxins and has been linked to longer life! One cup of these tasty berries has eight grams or the recommended 24 grams fiber you need each day.



Lemon for the Win:

I love the zestyness of lemon, and the bright burst of flavor that it can add to a recipe, add that to the dense concentration of micronutrients contained in this citrus' peel and you are already off to a good start. Since the skin of fruit is essential to protecting the lush tissues inside, they hold the highest level of antioxidants. By including this in your diet you are adding antioxidant and free- radical fighting machines. Increasing antioxidant and phytonutrient consumption has been linked to lower rates of cancer, heart disease and cognitive decline.


Fermented foods for Flavor:

As a cheese lover with dairy issues, most of you know that I tend to shy away from dairy on a day to day basis favoring some of the more easily digestible alternatives. Coconut yogurt is just that, a creamy and tangy replacement to the dairy filled one with so much more to offer. Like all yogurts, coconut yogurt is also fermented, leaving it chalked full of probiotics. Consuming foods high in these gut-happy bacteria helps to ensure a regular and healthy digestive system. These tiny microbes in the gut have a huge impact on your digestion, serotonin production, mental health, and immunity. Including whole foods and fermented foods into your diet is just one way to keep your gut in check.






Ingredients:

12 oz. blackberries, rinsed

1 c. unsweetened coconut milk

1/2 c. coconut yogurt

3 Tbsp. raw cashews

1 Tbsp. lemon zest

1/4 tsp. cinnamon

1 scoop vanilla Shakeology

1 c. ice


Instructions:

Rinse blackberries, zest lemon, then combine all ingredients into a blender and blend until smooth. Enjoy!
